A savory and textured chili oil with a loyal global following, made from dried and salted chilli peppers, soy sauce, sesame oil and garlic according to an authentic recipe from Chiu Chow, China, it packs an appealingly complex and subtle crunch. It is a speciality of Guangdong province, named after the city of Chiu Chow (also known as Teochow) where it is served as a condiment with meals.
