Soba is the Japanese name for buckwheat. Soba Noodles are a traditional yet indispensable Japanese meal.

Soba noodles are high on protein and fibre, much more than other noodles. The buckwheat flour, along with the wheat flour, gives it a slightly nutty and earthy taste. Soba noodles don’t take long to cook and are best cooked al dente to retain their slightly earthy taste. A few minutes of boiling is really all you need.
